Highway Gothic "B" and "C" have been the standard faces for years. Clearview is the new "cleaner" version many states have adopted. i don't think you'll find freebies of the name brand fonts, but RoadGeek B and C are very similar to Highway Gothic.

1st thing would be to check in Photoshop to make sure they are not already smart objects (vectors in PSDs). If you're lucky and they are copy/drag-n-drop into illy and your done. if, they're raster only, you can place them in illy and use the live trace>expand to have the built-in streamline-like feature convert them for you. the 1st layer looks the most promising, but you still may have to edit what is auto converted (or play with the trace options a few times to get better results). the shadows layer you could reproduce with the gradient mesh tool to a good degree (plenty of good TUTs online, ask Mr Google). but for all the time and quality of results, i think you be better spent redrawing with the pen tool in the layers and editable features you want to be able to edit/modify. sorry, but i don't think there's a quicker, easier, and more correct way than that. btw, is that a EA FIFAxx uni creator or something? nice layering.

i would use ovals with outlines (or strokes) for the collar/sleeve trim and use the jersey shape to mask off the undesired areas. any other offsets or warps will taper the ends that i think you do not want.

not sure how to measure a "degree of a curve", but the ruler tool info palette will show the angle when you [mouse click-drag] point to point. when using the pen tool you can [mouse click+shift] to keep bezier handles on a 0/45/90 degree angle as you draw. same when editing, use the [shift] to align the bezier to the 0/45/90 as you clean up a redraw.

correct, use a text box placeholder (drag text tool icon), type text (use enter/returns for next line) and then "justify all lines", voila!
