My guess is that it was screwed up when the PS4/Xbone released, because they had to redo a bunch of textures for the new consoles.

It was a direct arcade port, and the Jets were still in the old set when the arcade version came out in '97.

Texture limitations. Uniforms in video games couldn't really be "accurate" until the sixth (PS2) generation.

Indeed. Prior to 1995, there were only four teams in the AFC Central and NFC West, so the other divisions' fifth-placers had to play each other twice to fit the schedule formula. The Browns' six nondivisional games per year from 1999-01 were games the other AFC Central teams would have normally played based on previous-year finish. The missing games from the other AFC divisions were made up by adding more AFC East vs. AFC West games to the schedule, similar to the Central/West arrangement from 1970-77. (Remember, pre-2002, it was impossible to have entire divisions face each other because there were an odd number of divisions per conference.)

I wouldn't necessarily call this the wrong uniform. No Falcons QB is primarily associated with that uni, but Vick/Ryan are both associated with the red jersey, and of course the black one follows as a "right" uniform for them. -
I miss its theme music, for what it's worth.

Definitely an underrated Brewers set. Interestingly, the 1997-99 "M" caps aren't offered at the Miller Park team store. The Motre Bame caps are on sale, but I probably had the only M cap in the park the day I was there.

That specific uniform is "wrong" for any player, but not because of its quality. The other brick-Astros alts were far more "memorable" than this one. -
The 2002 game wasn't a one-off. Both teams brought the throwbacks back eight years later, also on Thanksgiving. This also means that "current Patriots vs. black-era Lions" is a hidden rare matchup, because it has never happened in Detroit in the regular season. Preseason photo from 2011:
