Custom school paintball jersey

I'm in the process of trying to design a paintball jersey for my school's team (Texas A&M). I've never used photoshop before, I have photoshop 7.0. I've got a blank template that shows the front, the back, and the two arms from a side view.

I want to start with the jersey template being totally maroon except for black cuffs and collar. I then want to add black and white accents to the rest of the jersey, though I'm not sure what I want to do with that. And lastly I want to put the basic school block "aTm" on the front in white outline and still have maroon fill. What's the official pantone number for Aggie Maroon anyways?

Could someone please help me? I've kind of changed the design idea, I've just been playing around with the brush and I'm trying to import a logo on to the jersey, but my current logo is too big.
