Fantasy Unis on EA NHL 2007

Okay all you veterans go easy on me here with this question.

What are the capabilities of EA NHL 2007 (or previous versions) when it comes to using custom uniforms/logos/teams. I know fantasy teams can be created and played but what kind of rendering of fantasy unis and logos does it have? If it's possible how much work is it to load up a complete fantasy uniform

Is there a "fast mode" where entire seasons can be played in a day. Is there a hockey simulation game or a "commissioner" mode of a game that renders fantasy unis well. Don't care about the game action.
