The 6 stars on the AFC logo goes back to the six stars on the old AFL logo representing the 6 original teams, but I have no idea why there are 3 stars on the NFC logo though.

Weren't there 8 original teams in the AFL?

Yes ! when the AFL took the field for the 1960 season but in the meetings when the league was founded in 1959 the charter members were Dallas, New York, Houston, Denver, Los Angeles, and Minneapolis. Boston & Denver were added later & when Minneapolis's ownership group dropped out to become a NFL Expansion Team , it was replaced by Oakland before the beginning of the season . But either way the 6 stars repersent the founding 6 .
