What font is the estimated weight/volume 'e' found on packaging/
That might just be a custom mark. I first noticed it when I went to England 20 years ago.
Upon further research, I stumbled across this:
Estimated SignOne product-labelling requirement of the European Union is that prepackaged liquids conventionally sold by volume or mass may have an estimate of the weight of the liquid also printed on the label. What the sign means is that the stated volume or mass complies with specific rules concerning permitted average and maximum deviations from the stated value. As that organization consists of countries that use many different languages, a unique symbol has been developed to aid recognition. Other laws have been passed to use this symbol for a few rare additional purposes. The estimated sign looks like a minuscule "e". But its exact shape is as much geometrically specified as any of the projects to construct letters of the alphabet during the Renaissance. No other minuscule "e" is permitted by law. This sign has been added to the Unicode list of characters, among others, just as the symbol for the Euro has been, and can be considered a new basic character in a typeface. It is character U+212E (℮).

You need to Offset Path, or go to the Appearance palette and add a stroke, dragging its layer below your object layer.

I went to an art school and majored in graphic design. All first and second year students have to take Drawing I and II as part of their foundation classes (required classes). Drawing I & II, Life Drawing I & II, 2-D Design, Color Theory, Graphic Design I and II, Illustration, Sculpture, Painting I and II, and various Art History classes.
Most art schools will have the same basic foundation curriculum. By this point, there might be computer graphics and typography classes included.

Just Drawing I and Drawing II at art school. Both were mandatory.

I know how to use Illustrator pretty well, but I just can't seem to get the shading down....
any tips/advice/technique that could be useful?
Squint. Squinting at an object causes it to be desaturated, allowing you to pick up the lights and darks easier. I leaned this in drawing classes in college.
Of course, you could also bring your reference picture into Photoshop and desaturate it there, then posterize it or play with the curves to increase the contrast with the lights and darks.

Check Eriq Jaffe's signature file. The font is very similar to the one used by the Bears, Chiefs and Bills.

Not sure if PNG supports transparency (probably does, but I don't usually save in that format). A GIF file will support transparency.
If you're working in Photoshop, the easiest way is to make a layered file, but turn off the visibility of the bottom layer, then "save as web", make sure the file option is set to GIF, and check the transparency button.

I was wondering if anyone knew how to make vertically arched text, like what the Washington Nationals use for their wordmarks. Thanks in advance.
You mean like the text here:
If so, highlight everything you want arched, then go Shift F9 to bring up the Pathfinder tab.
Click on Merge to make everything one compound shape, and it also Groups it.
Then go
Effect>Warp>Arc Lower.
Play with the Bend Percentage until it looks like what you want.
I have Illustrator 8.0... how can i vertacly arch text using this program, because none of the keys you described are on this earlier program that i have.
I don't think you can arch text in 8.0. I don't think it came in until version 9.0 or 10.0. Before then you had to use third party software or plug-ins.

From the L.L.Bean holiday catalog. This is actually the typeface used in the current L.L.Bean logotype as well. It's beautiful, and there are some big, clear examples of it in the catalog. Something like the capital G might be a dead giveaway, but I just can't pinpoint it for the life of me. Great set of italics to boot.
Kind of looks like Cheltenham Old Style.
