Im assuming the AFL Finals considering Waltzing Matilda is an Australian song.

'Waltzing Matilda' is kind of the unnoficial anthem of Australians. As I understand it, it draws on Australian musical traditions, and the like. The song is so beloved by Australians it has its own website

http://www.nla.gov.au/epubs/waltzingmatilda/index.html

As for being played at tjhe Grand Final, well Aussie Rules is a game invented by Aussies, and the song is a traditional Aussie song, the two kind of go together. Like 'Take me out to the Ballpark' and Baseball if you like.

It's tradition... like a lot of traditions it makes no sense but no-one will dare change it.

The song is about a petty crim who wanders the outback stealing sheep and commits suicide by jumping in a lake when he's surrounded by the cops.

So it really is about our national heritage :D
