Pretty sure in this case they are referring to yearling cattle (a yearling is generally any animal that is a year old) as it's not customary to brand horses. 

 

Maverick has come to take on the meaning of someone who defies convention because Samuel Maverick refused to follow the convention of branding his cattle.

I realize it's far too meta (and silly) but in light of the origins of the name, wouldn't it make more sense for Dallas to not have any logos or wordmarks on their jerseys?

Yep, I always thought that Fc Dallas's crest would have been a far superior logo for the mavs

Ugh, no... If they ever bring back these unis, I'd prefer to do them right - that throwback has the wrong number font, "Dallas" is too compressed, the blue's too light... This is how they should look:
