It seems like a couple other Sharks players from that time went south (Heatley & Setoguchi) and there really isn't any reason for it. Cheechoo's success was solely due to Thornton playing center on his line. Cheechoo in his prime was a perfect fit. He also had double sports hernia surgery the offseason after he got 56, and a concussion the season he got 23, which I don't think he ever fully recovered from.
